Sibeeria Aurorae is a sophisticated exploration of the Hazy IPA, utilizing a unique yeast blend that introduces a subtle spicy ester profile. The hop architecture features a foundation of Chinook, providing a structured backdrop for the expressive dry-hop duo of Idaho 7 and El Dorado Cryo. This combination yields high-intensity aromas of lime and lemon rind, layered over exotic notes of jackfruit and sweet Canary melon. On the palate, the pale, bready malt allows these tropical flavors to flourish, leading to a distinctive spicy bitterness. The result is a luminous, opaque ale that remains dangerously drinkable with a smooth, soft mouthfeel.

Appearance. Straw to light orange (4-5 SRM). Opaque and hazy with a luminous shine. Thick, white, meringue-like head with excellent retention and lacing.

Aroma. High intensity. Prominent lime and citrus zest from Idaho 7, supported by tropical jackfruit and Canary melon from El Dorado Cryo. Background notes of pine and light spice from Chinook. Clean, bready malt and subtle fruity, slightly spicy fermentation esters.

Taste. Explodes with fruity hop flavors, specifically lemon peel, lime, and tropical melon. Low, grainy malt sweetness. Bitterness is low-moderate but presents with a unique spicy character from the yeast and Chinook interaction. The finish is smooth, off-dry, and lingering with citrus oils.

Mouthfeel. Medium-full body with a soft, pillowy texture. Medium carbonation. Noticeable but well-integrated alcohol warmth. Very smooth with no hop astringency.
