This contemporary Gose offers a vibrant, tropical twist on the historical German style, showcasing a collaborative fusion of fruit and mineral complexity. The aromatic profile is dominated by the lush, tropical sweetness of Guava and the bright, tangy notes of Pineapple, while added Lemon reinforces the natural lactic acidity. Built upon a soft base of Pilsner and wheat malt, the palate is exceptionally refreshing. The inclusion of Cahuil Salt provides a distinct, savory mineral depth that enhances the mouthwatering qualities of the fruit. It finishes bone-dry and effervescent, leaving a lingering impression of tropical citrus and a crisp, clean tartness.
Appearance. Yellow (3-4 SRM) with a moderate to full haze from wheat and fruit solids. Features a moderate white head with tight bubbles and fair retention for the style; highly effervescent.
Aroma. High intensity of tropical fruit, specifically guava and fresh pineapple. Clean lactic sourness is complemented by a sharp lemon citrus character. Moderate bready malt notes provide a background for a subtle, mineral-like sea salt aroma. No hop aroma or esters.
Taste. Immediate, refreshing lactic sourness of medium-high intensity. Prominent flavors of pineapple and guava lead the palate, followed by a bright lemon zing. Low bready malt flavor. The Cahuil Salt is noticeable but restrained, providing a savory, tingly counterpoint to the fruit. No hop flavor or bitterness. The finish is very dry and acidic, with a lingering fruit tartness.
Mouthfeel. Medium-light body with a slightly rounder, thicker mouthfeel due to the salt and wheat. Very high carbonation creates a prickly, effervescent sensation. No alcohol warmth; the salt induces a mouthwatering, tingly quality on the tongue.
