Síbaros Brewery’s Chocombuesa is a flavorful American Stout that merges traditional roasted complexity with the indulgence of a pastry-style ale. The sensory profile is headlined by a bold aroma of dark chocolate and roasted coffee, punctuated by the bright, tangy scent of fresh raspberries. On the tongue, the deep cocoa notes from the malt and chocolate additions are balanced by a distinctive berry tartness and a firm, resiny hop bitterness characteristic of the style. Despite its dessert-like inspirations, it remains approachable at 5.8% ABV, offering a medium-full body and a crisp, roasted finish that highlights the delightful interplay between fruit and charred grain.
Appearance. Jet black (38 SRM) and opaque; topped with a large, persistent light brown head that exhibits dense lacing.
Aroma. High intensity with a dominant roasted coffee and dark chocolate character. A pronounced raspberry fruitiness provides a fresh, tart contrast. Low resiny hop aroma and light dark-fruit esters support the primary roasted profile.
Taste. Initial impression of bittersweet chocolate and tart raspberries followed by strong roasted grain flavors reminiscent of espresso. Features a medium-high bitterness that balances the light sweetness of the fruit. The finish is medium-dry with a lingering charred malt and berry-skin aftertaste.
