Stabbo Collabo is a lush Double IPA defined by a super soft mouthfeel and a complex hop saturation. The heavy addition of Nelson Sauvin leads the charge, imparting distinct notes of white-wine gooseberry and crushed grapes. Mosaic and Idaho 7 complement this vinous character with layers of ripe stone fruit, vibrant mango, and a medley of mixed berries and bright citrus. Despite its 8% ABV, the malt remains a neutral, clean backbone, allowing the intense tropical and berry hop characters to take center stage. It finishes with a smooth, well-integrated bitterness, showcasing a modern, fruit-forward approach to the style.
Appearance. Pale gold to light orange-copper (SRM 6-9); hazy with a moderate-sized, persistent off-white head and significant lacing.
Aroma. Intense hop aroma featuring prominent gooseberry, mango, and mixed berries; supportive, neutral, grainy malt in the background with light tropical fruit esters and a hint of clean alcohol warmth.
Taste. Strong and complex hop flavors of peach, mango, and citrus zest; moderately high bitterness that remains smooth rather than harsh. Soft, unobtrusive grainy malt character; finishes medium-dry with a lingering vinous and berry-like hop aftertaste.
Mouthfeel. Medium-full body with a noticeably soft, creamy texture; moderate carbonation; restrained, smooth alcohol warmth without any hop-derived astringency.
