This Imperial Stout presents a sophisticated interplay of deep roast and luxurious adjuncts. A complex grist of Pilsner, Malted Oats, Crystal T50, Pale Chocolate, and Crystal DRC creates a foundation of burnt caramel and roasted coffee. Lightly hopped with Magnum, the profile is dominated by rich Canadian Grade A Dark Maple Syrup and Madagascar Bourbon Vanilla Beans, yielding aromatic notes of marshmallow and dark chocolate. Despite the high gravity and indulgent ingredients, the palate remains remarkably balanced, transitioning from a velvety sweetness to a surprisingly crisp and dry finish that belies its strength. It is a harmonious, modern interpretation of a classic strong stout.
Appearance. Opaque jet black (SRM 40+) with a thick, dense, dark tan head that exhibits moderate retention. High viscosity is apparent through visible legs on the glass when swirled.
Aroma. High intensity with a rich blend of dark maple syrup and aromatic vanilla. The malt profile contributes prominent scents of roasted coffee, dark chocolate, and a hint of charred grain. Secondary notes of marshmallow and burnt sugar emerge from the Crystal DRC and Crystal T50 malts, while Magnum hops remain very low and earthy in the background.
Taste. Initial impression is rich and decadent, featuring intense flavors of espresso and bittersweet chocolate from the Pale Chocolate and Roasted malts. The maple syrup provides a woody, dark sweetness that melds with the creamy vanilla. Bitterness is moderate, providing enough structure to support the malt weight without becoming harsh. The finish is unexpectedly clean and dry, leaving a lingering aftertaste of dark cocoa and toasted marshmallow.
Mouthfeel. Full-bodied and chewy with a velvety, luscious texture enhanced by the addition of Malted Oats. Carbonation is moderate to low. A smooth, noticeable alcohol warmth is present but well-integrated, avoiding any sharp or solventy edges.

Birra imponente con base Pils seguita a valanga da Avena Maltata Crystal T50, Pale Chocolate, Chocolate, Crystal DRC, Roasted e luppolata esiguamente in amaro con Magnum, ricevendo a fine bollitura una vagonata di Dark Maple Syrup di MapleFarm.
Dopo una lunga fermentazione, la birra vine condizionata a temperatura controllata con aggiunta di Baccelli di Vaniglia del Madagascar di altissima qualità. Birra che continuerà a maturare e solo con il tempo amalgamerà alla perfezione tutte le armonie, considerando però che la freschezza aromatica di Vaniglia ed Acero andrà via via ad affievolirsi.
Cade nel bicchiere profondamente scura con un leggero cappello di schiuma color nocciola non troppo persistente data l’alta gradazione alcolica ed il livello di carbonazione ai minimi termini. Un liquido denso ed oleoso. Aroma equilibrato con nette note zuccherine dolci, che mentre la birra si scalda emergono sotto forma di marshmellow, vaniglia e sciroppo d’acero scuro, amalgamandosi perfettamente alle note tostate, senza sbilanciarsi, rimanendo in sintonia tra loro. In bocca entra piena e cremosa, con un mouthfeel vellutato che non rilascia astringenze o acidità dei malti, ripetendo le sensazioni avvertite al naso, davvero un connubio perfetto tra gli elementi.
