Appearance. Pours a hazy, pale straw yellow with a moderate, bright white head that dissipates relatively quickly, leaving minimal lacing. The unfined nature of the beer provides a persistent, cloudy opacity.
Aroma. High intensity aromatic profile dominated by the distinctive, perfumed scent of Yuzu. Bright notes of lemon zest, lime peel, and grapefruit are complemented by delicate floral blossom aromatics. A clean, lemony lactic sourness is present, with very low earthy wild fermentation notes.
Taste. The palate is led by a sharp, refreshing acidity. Flavors of tart Yuzu, green lime, and bitter grapefruit pith predominate.
