ShinDigger Pio is a vibrant Wild Specialty Beer that bursts with a tropical intensity driven by massive additions of passion fruit and pineapple puree. The sensory experience is led by an aggressive bouquet of zesty tropical fruit, where the sharp tang of passion fruit meets the juicy, sun-ripened character of pineapple. These specialty ingredients are underpinned by a nuanced wild fermentation that provides a crisp, tart backbone, lifting the fruit profile without overwhelming the senses. Effervescent and bright, it offers a refreshing tropical zing that transitions from a lush, fruit-forward palate to a remarkably dry, acidic finish.

Appearance. SRM 4-6; deep gold with a distinct hazy, opaque yellow tint from the heavy fruit puree additions. The head is white, consisting of small bubbles with moderate-to-low retention, leaving minimal lacing.

Aroma. High intensity aromatics dominated by fresh, tart passion fruit and sweet, floral pineapple. A clean lactic sourness is present, accompanied by subtle earthy funk and a faint, crackery malt base. No hop aroma or diacetyl.

Taste. Initial impression is sharply tart and fruit-forward. The pineapple and passion fruit flavors are vivid and authentic, though the sweetness is fermented out, leaving a dry profile. Moderate-high lactic acidity provides a clean snap. Hop bitterness is very low, hidden by the acidic balance. The finish is short, crisp, and exceptionally dry with a lingering tropical aftertaste.
