This Wild Specialty Beer, crafted in collaboration with Mikkeller, delivers a vibrant and refreshing sensory profile. The aroma is led by the distinctive floral and honeyed mineral notes of Shilixiang Tea, which meld seamlessly with the sharp, zesty spray of fresh grapefruit. On the palate, a bright lactic tartness provides a crisp foundation for layers of citrus peel and delicate oolong tea tannins. The 4% ABV allows for a sessionable, light-bodied character where the acidity elevates the fruit without becoming overwhelming. It finishes bone-dry with a lingering, elegant earthy florality and a clean, refreshing snap.
Appearance. Pours a pale straw color with a subtle hazy golden hue and a very faint salmon-pink tint from the grapefruit. The white, frothy head shows moderate initial height but recedes quickly to a fine collar with light lacing.
Aroma. High intensity aromatics featuring the perfumed orchid and honeyed character of Shilixiang Tea, paired with aggressive fresh grapefruit zest. Very low crackery malt is present, supported by a clean, sharp lactic acidity and tropical hop notes.
Taste. Initial impression is a sharp, tart burst of grapefruit juice and lemon pith. The mid-palate reveals the complex, slightly mineral and herbal depth of the Shilixiang Tea. Malt flavor is minimal, providing just enough structure for the acidity. Hop bitterness is low, though reinforced by tea-derived tannins. Finishes very dry and clean with no lingering sweetness.
Mouthfeel. Light-bodied and exceptionally crisp. Carbonation is high and effervescent, providing a prickly sensation that enhances the perception of dryness. Alcohol warmth is non-existent, and there is a very slight, pleasant tea-driven astringency.
