Shared Table Nouveau (2023)

Shared Table Nouveau presents as a bright, highly-attenuated Belgian Single, leaning into the rustic elegance of a monastic table beer. The sensory profile is defined by a vivid interplay between New Zealand Rakau hops and expressive Belgian yeast, offering layers of stone fruit like apricot and peach against a backdrop of cracked black pepper. A delicate foundation of Pilsner malt provides a crackery, bready sweetness that supports the assertive bitterness. Effervescent and bone-dry, this sessionable ale balances floral hop notes with a spicy, clean finish, making it a sophisticated yet approachable expression of traditional fermentation and modern hopping.
Appearance. Pale straw to light gold (3–4 SRM). Topped with a large, billowy white head with excellent retention and delicate lacing. Brilliantly clear, though a very faint hop haze may be present.
Aroma. High intensity with a complex profile of orchard fruits including pear and apricot, driven by Rakau hops. These fruity esters are complemented by moderate spicy phenols reminiscent of clove and white pepper. A low, grainy-sweet malt backdrop suggests fresh bread and light honey.
Taste. Initial malt impressions of cracker and bready Pilsner malt are quickly overtaken by a crisp, assertive bitterness. Flavors of peach and tropical fruit from the hops meld with spicy yeast esters. The finish is remarkably dry and clean, leaving a lingering trail of floral hops and peppery phenols on the palate.
Mouthfeel. Light-bodied and highly attenuated with a prickly, high carbonation that enhances the refreshing quality. Smooth despite the dryness, with absolutely no alcohol warmth and zero astringency.
