Sesma Terroir presents a complex fusion of wild fermentation and viticulture, highlighting the integration of organic Graciano grape must within a traditional Straight Sour Beer framework. Six months of maturation in French oak barrels imparts a structured wood character that complements the sharp lactic acidity. The aroma is defined by tart red fruit and subtle vinous notes, supported by a sensory backbone of Pale and Caramel malts. Non-Saccharomyces yeasts drive a unique fermentation profile, yielding a crisp, dry finish where the earthy elegance of the grape skin meets a soft, lingering oak tannin.
Appearance. Deep gold to light amber in color (8-10 SRM) with a slight haze from bottle refermentation. Features a moderate, fine-beaded white head with fair retention and light lacing.
Aroma. High intensity lactic sourness leads the profile, followed by the distinctive scent of crushed Graciano grapes, dark berries, and plum. Subtle toasted French oak provides a spicy, woody backdrop. Low bready malt character from the Pale malt is present, with no detectable hop aroma.
Taste. Sharp initial impression of clean lactic acidity and tart grape skin. A light biscuit and honeyed sweetness from Pale and Caramel malts balances the sourness. Pronounced fruity esters of lemon and red fruit lead to a dry, vinous finish. Hop bitterness is undetectable, while detectable woody tannins from the oak provide complexity. Clean, without vinegary notes.
Mouthfeel. Light to medium-light body with crisp, effervescent moderate-to-high carbonation. Features a refreshing acidic bite and a subtle, drying astringency from the grape skins and barrel aging. Very low alcohol warmth.
