This Imperial Stout evokes the classic Austrian dessert through a decadent, layered sensory profile. Rich Pale and Munich malts provide a sturdy, toasted foundation for intense additions of cacao and Bourbon vanilla. Deep aromas of coffee and dark chocolate mingle with the distinct, stone-fruit sweetness of apricot jam and a subtle, vinous lift from Kirsch. On the palate, Columbus hops offer a balancing bitterness against a lush, syrupy sweetness. The experience is incredibly dense and creamy, mirroring a liquid cake where the roasted malt character harmonizes with jammy fruit and a gentle spiritous warmth through a long, luxurious finish.
Appearance. Opaque, jet black (SRM 40+). Dense, persistent dark tan head with thick lacing. High viscosity produces visible legs on the glass when swirled.
Aroma. High intensity. Prominent dark chocolate and cocoa powder over a base of espresso-like roasted malt. Significant fruity esters and adjunct notes of sweet apricot compote and a hint of cherry-like Kirsch. Subtle spicy hop notes and a sweet, woody Bourbon vanilla character.
Taste. Rich and complex initial impression of bittersweet cacao and toasted malt. Mid-palate reveals luscious apricot jam sweetness and a touch of tart cherry. Firm but smooth bitterness from Columbus hops balances the high residual sugar. Finish is long and sweet with lingering notes of dark fruit, vanilla, and a clean alcoholic warmth; not cloying but distinctly dessert-like.
Mouthfeel. Full to very full-bodied, thick, and chewy. Low to moderate carbonation enhances the velvety, luscious, and creamy texture. Noticeable but smooth alcohol warmth is present, providing a well-integrated spiritous character.
