This Double IPA presents a bold sensory tapestry defined by its potent hop profile and sturdy backbone. A vibrant blend of Amarillo, Mosaic, and Columbus hops drives intense aromas of tropical mango, floral blossoms, and stone fruit, grounded by a persistent thread of resinous pine. The use of Pale and Caramel malts provides a clean, supportive base with subtle toasted notes that balance the aggressive bitterness. On the palate, the experience is intensely hoppy and resinous, finishing with a crisp, medium-dry character typical of the style. The 8.5% ABV adds a smooth, integrated warmth to this complex and assertive ale.
Appearance. Anaranjado or deep orange-copper (8-12 SRM) with good clarity; features a thick, persistent, and creamy ivory-colored head that leaves significant lacing.
Aroma. High intensity hop aroma with complex layers of tropical fruit, peach, and orange blossom. Mosaic and Amarillo provide stone fruit and citrus notes, while Columbus adds a pungent, resinous, and dank pine character. A light, clean, grainy malt presence with a hint of caramel sweetness sits in the background.
Taste. Initial impression is a wave of resinous and fruity hop flavors including mango and pine. Very high bitterness is firm but not harsh, supported by a clean Pale malt backbone and light caramel toastiness. The fermentation profile is neutral, leading to a medium-dry finish with a long, lingering bitter and hoppy aftertaste.
Mouthfeel. Medium body with a smooth, creamy texture. Carbonation is moderate to high. A noticeable but well-integrated alcohol warmth is present, reflecting its strength without being solventy or astringent.
