This Wild Ale presents a sophisticated sensory interplay between a structural Pale Ale base and the rustic influence of non-saccharomyces fermentation. Infused with organic Navarra cherries and aged for six months in French oak barrels, the profile is defined by bright, tart stone fruit and subtle woody tannins. The aroma leads with a moderate wild funk—hints of leather and hay—intertwined with a vivid red cherry perfume. On the palate, the Navarra cherries provide a snappy, refreshing acidity rather than sugary sweetness, finishing bone-dry. Delicate notes of vanilla and toasted wood from the French oak provide an elegant structural balance to the wild, fermented character.
Appearance. Vibrant ruby-red to deep copper-amber with a soft pinkish-white head that shows moderate retention. Generally clear with a slight haze from the wild yeast and bottle conditioning; fine carbonation streams are visible.
Aroma. High intensity with prominent notes of fresh Navarra cherries and a distinct wild funkiness characterized by earthy leather and mild hay. Low grainy malt sweetness is layered under a noticeable lactic tartness and a refined French oak presence, suggesting light vanilla and toasted wood.
Taste. Initial sharp tartness of cherry skin and lemon zest, evolving into a more complex, funky middle. The Navarra cherries offer a bright, acidic fruit flavor that dominates the palate. Bitterness is very low, allowing the fermentation acidity and oak tannins to provide structure. The finish is exceptionally dry and crisp with a lingering, faint almond-like cherry pit aftertaste.
Mouthfeel. Medium-light body with a refreshing, prickly high carbonation. Very low alcohol warmth is appropriate for the strength. A slight tannic astringency from the French oak and cherry skins adds a pleasant, wine-like structure to the palate without being harsh.

Cerveza de estilo Sour Ale envejecida en barrica de vino tinto con 30 kg de cereza de Navarra. Elaborada con malta Pils, y lúpulo envejecido. De color rojo cereza de espuma blanca/rojiza, poco persistente, ligeramente achampanada, cuerpo ligero. Aroma potente a cereza.  

 

Maridaje: te sugerimos que la acompañes a los postres, con repostería de frutos rojos. Y también con quesos cremosos o frescos.
