Separatist Beer Project Cuvée Fay

Cuvée Fay is a delicate, rustic Table Saison that showcases a masterful integration of botanicals and wood. Fermented in French oak wine barriques, it presents a sophisticated sensory profile where floral notes of rose petals and chrysanthemum intertwine with the honey-like essence of chamomile. An expressive saison yeast provides a spicy foundation, further complexified by a blend of Brettanomyces that lends a subtle, earthy funk and barnyard complexity. The extensive bottle conditioning results in a bone-dry finish and highly effervescent character. Despite its sessionable strength, the barrel aging imparts a refined vinous quality, making it a highly nuanced and refreshing farmhouse ale.
Appearance. Pours a pale, straw gold (SRM 3-4) with a slight, hazy particulate consistent with bottle conditioning. It is crowned by a long-lasting, dense, rocky white head that leaves intricate Belgian lacing as it slowly recedes.
Aroma. High intensity and highly aromatic. A complex bouquet of floral rose petals, chamomile, and herbal chrysanthemum leads, supported by spicy yeast phenols reminiscent of cracked white pepper. Secondary notes of earthy Brettanomyces funk and a light vinous, oaky character from the French oak wine barriques are present, with a very low, grainy malt background.
Taste. The initial impression is bone-dry and effervescent. Floral flavors of chrysanthemum and rose petals are prominent, followed by a mid-palate of soft, grainy malt. A peppery yeast spice is balanced by a moderate hop bitterness and a light tartness from the wood and wild yeast. The finish is exceptionally dry and crisp, with a lingering earthy, funky aftertaste and a faint hint of vanillin from the oak.
Mouthfeel. Light-bodied with a very high, effervescent carbonation that provides a prickly, refreshing sensation. There is no perceived alcohol warmth due to the low ABV. The finish is crisp and clean, with a very slight tannic structure from the French oak that adds to the dryness without being astringent.
