This Black IPA offers a striking sensory contrast, blending an obsidian appearance with the vibrant, lupulin-forward soul of an American IPA. Shifter utilizes a potent hop trio of Columbus, Centennial, and Altus to deliver a punchy aromatic profile of grapefruit zest, resinous pine, and herbal dankness. The dark malts provide a restrained foundation of light toast and unsweetened cocoa, intentionally avoiding harsh or ashy char. A clean fermentation allows the hop-driven citrus and woodsy notes to remain front and center. Balanced and remarkably dry on the palate, it maintains high drinkability with a firm bitterness that lingers pleasantly into a crisp finish.
Appearance. Dark brown to opaque black (35-40 SRM). Features a persistent, moderate light tan head with good lacing and fine bubbles.
Aroma. High intensity hop aroma dominated by citrus zest, pine resin, and a subtle herbal dankness. Low malt character offering hints of chocolate and toasted bread. Clean fermentation profile with no significant esters.
Taste. Initial impression is hop-forward with flavors of grapefruit and resinous pine. Low malt flavor provides a supportive backdrop of light coffee and toast without burnt or acrid qualities. Medium-high bitterness that is firm but smooth. The finish is dry and clean with a lingering hop-driven and slightly roasted aftertaste.
Mouthfeel. Medium body with a smooth, non-astringent texture. Moderate carbonation provides a crisp mouthfeel. Very light, well-integrated alcohol warmth.
