Mummies Bakery is an evocative Wild Specialty Beer that bridges the gap between a classic pastry profile and the complex world of wild fermentation. This 7% ABV ale centers on a lush core of baked apple and ripe banana, recreating the sensory experience of a fresh apple strudel. The aroma is dominated by these fruit components alongside a comforting, doughy malt presence and a hint of warm baking spices. On the palate, the sweetness of the fruit is expertly countered by a bright, clean lactic acidity, ensuring the rich dessert flavors remain refreshing rather than cloying. The result is a multi-layered, adventurous beer that balances indulgent bakery notes with a crisp, funky sophistication.

Appearance. Deep gold to burnished amber (SRM 8-12). The beer exhibits a noticeable haze from fruit additions and specialty ingredients, topped by a dense, off-white head with moderate retention and light lacing.

Aroma. High intensity aromatics of stewed gala apples and sweet, creamy banana. A distinct spiced character reminiscent of cinnamon and nutmeg integrates with a doughy, biscuity malt base. A moderate lactic tartness and very light earthy funk provide a complex wild fermentation backdrop.

Taste. The initial impression is a vibrant burst of tart apple followed by the smooth, tropical sweetness of banana. Malt flavors evoke pie crust and toasted grain. Hop bitterness is very low, allowing the fruit acids and a moderate lactic sourness to provide balance. The finish is lingering and off-dry, with the strudel-like fruitiness and spice persisting against a clean, acidic snap.

Mouthfeel. Medium-full body with a notable creaminess and roundness, likely enhanced by the banana. Carbonation is moderate, providing a refreshing lift. A gentle alcohol warmth is present but well-integrated, with no significant astringency beyond a slight fruit-acid tingle.
