This Imperial Sour Ale presents a striking sensory profile dominated by the deep, vinous contributions of plum and aronia. On the nose, a high-intensity blend of tart stone fruit and earthy berries meets the characteristic funk of a wild fermentation, underpinned by a noticeable alcoholic warmth reflecting its high strength. The palate is a complex interplay of sharp acidity and rich fruit character, where the plum provides a jammy depth while the aronia adds a structural, tannic dryness. Despite the high alcohol content, the finish remains balanced between lingering fruit skin and a sophisticated, warming dryness typical of a Wild Specialty Beer.
Appearance. Opaque, deep blood-red to dark purple (SRM 35+) with a persistent, finely-textured pink head that leaves moderate lacing; clarity is low due to fruit density.
Aroma. High intensity aromatics featuring sharp, jammy plum and the distinctively earthy, slightly floral scent of aronia berries; subtle funk from wild yeast (leather, hay) is present, along with a clean, spicy alcohol note.
Taste. A bold, acidic opening gives way to layers of dark fruit. The plum offers a fleshy richness, while the aronia brings a dry, puckering tartness and a woody complexity. Hop bitterness is very low, as the balance is driven by acidity and fruit tannins; the finish is long and warming with a lingering berry tartness.
Mouthfeel. Medium-full body with a surprisingly creamy texture for a sour beer; carbonation is moderate, providing a lifting effect that cuts through the fruit density. A distinct but pleasant alcoholic warmth is present, accompanied by a light, dry astringency from the berry skins.
