Big Bad Wolf is a formidable Imperial Stout that balances aggressive strength with the sophisticated indulgence of tiramisu. This jet-black liquid presents a complex profile where the bold, roasted character of dark malts meets the dessert-like nuances of espresso-soaked ladyfingers and velvety cocoa. The 11.6% ABV provides a significant but well-integrated warmth that enhances the deep flavors of bittersweet chocolate and creamy vanilla. While the base beer delivers the expected intensity of a leader among stouts, the addition of tiramisu ingredients softens the edges, resulting in a rich, decadent experience that transitions from charred roast to a lingering, sweet finish.
Appearance. Jet black and completely opaque (40 SRM). Pours with a dense, persistent, deep tan to dark brown head that leaves thick lacing. High viscosity is evident through slow-moving legs on the glass.
Aroma. High intensity with a rich blend of dark chocolate, espresso, and roasted grain. Prominent notes of cocoa powder and creamy vanilla emerge from the tiramisu addition, supported by subtle esters of dried plums and black currants. Alcohol is present but smooth, lacking any harsh solvent notes.
Taste. An intense initial impression of bittersweet chocolate and charred malt. The mid-palate reveals layers of coffee and a biscuit-like sweetness reminiscent of savoiardi. Hop bitterness is firm and moderate, providing a necessary counterpoint to the rich, residual sweetness of the dessert adjuncts. The finish is long and warming, featuring a harmonious interplay of dark roasted beans and creamy vanilla bean.
