Bad Moons is a bold, high-gravity interpretation of a Gose that challenges the palate with an unconventional mushroom infusion. The sensory experience begins with a bright lactic tartness and a foundation of doughy wheat and Pilsner malts. Fresh, citrusy coriander and a distinct mineral saltiness provide the traditional framework, while the addition of mushrooms introduces a deep, earthy umami character. At 6.5% ABV, this version offers more weight and complexity than historical examples. The finish is strikingly dry and refreshing, balancing savory depth with a sharp, acidic snap that leaves a lingering, mouthwatering impression of salt and forest floor.

Appearance. Unfiltered and hazy yellow (4 SRM) with a tall, dense white head characterized by tight bubbles and moderate to good retention. Highly effervescent with visible carbonation.

Aroma. Moderate to high intensity featuring clean lactic sourness and a distinct doughy, bready wheat malt profile. Prominent citrusy coriander notes resembling lemon peel are complemented by an unusual but integrated earthy, savory umami aroma from the mushroom addition. No hop aroma is present.

Taste. Initial impression is a sharp, medium-high lactic sourness balanced by a moderate bready malt backbone. Light lemon and pome fruit esters transition into a noticeable salt character that provides a savory tang without being overtly briny.
