Free the Thiols is a saturated and vibrant Hazy IPA that showcases the aromatic potential of biotransformation. This 7% ABV pour is defined by an intense tropical hop profile, where Nectaron drives succulent notes of ripe peach and passionfruit. The addition of Nelson Sauvin introduces a sophisticated layer of crushed gooseberry and white wine, while Citra provides a bright, citrusy foundation of grapefruit and lime zest. A soft, pillowy mouthfeel and restrained bitterness allow these lush fruit characters to take center stage, supported by a clean, grainy malt backbone that leads to a juicy, smooth finish.

Appearance. 3–5 SRM. Deep straw to pale gold with a characteristic opaque, hazy shine. Features a medium-high, rocky, meringue-like white head with exceptional retention and thick, persistent lacing.

Aroma. High intensity hop aroma featuring prominent stone fruit, tropical passionfruit, and guava. Distinctive white wine and gooseberry notes are present alongside zesty lime and grapefruit. The malt is neutral and lightly bready in the background, supported by clean, fruity fermentation esters.

Taste. High to very high fruity hop flavors of peach, tropical fruit, and citrus. The palate follows the aroma closely, emphasizing the vinous qualities of the hops. Malt flavor is low and grainy-sweet. Perceived bitterness is mild, providing balance without sharpness. The finish is off-dry and smooth, leaving a lingering impression of tropical fruit juice.

Mouthfeel. Medium-full body with a soft, pillowy, and smooth texture. Carbonation is moderate. A very light, well-integrated alcohol warmth is present, though the beer remains highly drinkable without any astringency or hop burn.
