This Double IPA, a collaboration with Gordon Strong, showcases the multifaceted nature of Mosaic hops alongside a delicate addition of orange blossom honey. It pours a brilliant gold, releasing an intense bouquet of passion fruit, citrus, and subtle spice, underpinned by floral honeycomb notes. The palate is defined by vibrant tropical fruit and a clean, citrus-forward fermentation profile that heightens the hop impact. Despite its 8.4% ABV, the beer maintains remarkable drinkability through a dry finish and a restrained, elegant bitterness. It is a sophisticated, hop-focused experience that balances power with a light, floral lift.
Appearance. Deep gold to pale orange-copper (7-9 SRM). Exceptional clarity with a moderate, persistent off-white head that leaves delicate lacing.
Aroma. High intensity hop aroma featuring prominent notes of passion fruit, blueberry, and citrus zest from the Mosaic hops. Complementary floral and honeycomb scents from the orange blossom honey combine with a light, citrusy ester profile. Malt is low and neutral, providing a clean canvas.
Taste. Initial impression is a burst of tropical fruit and resinous spice. The Mosaic hop character is central, offering layers of mango and grapefruit. A firm but smooth bitterness balances the subtle honey-sweetness. The finish is remarkably dry and clean, with a lingering citrus and floral aftertaste. Low, supportive grainy malt character in the background.
Mouthfeel. Medium body with a smooth, slightly creamy texture. Carbonation is medium-high. A gentle, well-integrated alcohol warmth is present but never solventy or harsh. No hop-derived astringency.
