This is a complex, dessert-focused interpretation of a dark ale, emphasizing fruit-forward sweetness and rich, roasted depth.
Appearance. Jet black (SRM 40+) and opaque. It features a persistent, creamy, toffee-colored head with moderate lacing.
Aroma. High intensity with dominant notes of natural cacao and dark chocolate. As the beer warms, it reveals complex fruity esters of strawberry and vinous barrel notes including raisin, plum, and a hint of nutty sherry. Low roasted coffee and a smooth alcohol presence are secondary.
Taste. Initial impression is rich and sweet, featuring intense dark chocolate and ripe strawberry. The malt profile is deep, providing caramel and roasted grain flavors without harsh acridity. Medium-low bitterness (33 IBU) provides just enough balance for the heavy residual sweetness. The finish is long and liquor-like, showcasing wood tannins and dried fruit from the Pedro Xim nez and Oloroso barrels.
Mouthfeel. Full-bodied and viscous with a creamy texture derived from the use of oats and wheat. Carbonation is moderate. Significant alcohol warmth is present but smooth and well-integrated. No notable astringency.
