The addition of vanilla oak chips introduces a subtle woody complexity and a hint of refined tannin that balances the beer’s natural richness. Despite its high gravity, the beer maintains a sophisticated harmony, delivering a dessert-like character that emphasizes creamy textures and gentle warmth without becoming overly syrupy. Appearance. Jet black and opaque (SRM 40+). Pours with a dense, persistent dark tan head that leaves significant lacing on the glass. High viscosity is apparent, with visible legs forming upon swirling due to the 9.8% ABV.
Aroma. High intensity. Dominated by rich bittersweet chocolate, espresso-like roasted malt, and a pronounced, fragrant vanilla bean character. Secondary notes include toasted oak, light caramel, and a subtle suggestion of dark dried fruits like prunes. Hop aroma is very low, allowing the adjuncts and malt to lead. Clean fermentation with a noticeable but well-integrated alcohol presence.
Taste. Bold initial impression of dark roasted grains and cocoa. The mid-palate is saturated with creamy vanilla and a refined woody dryness from the oak chips. Bitterness is moderate to firm, providing necessary structure against the heavy malt sweetness. Notes of black licorice and charred toast emerge toward the finish. The aftertaste is lingering and complex, featuring a blend of roast bitterness, sweet vanilla, and a smooth, warming glow.
Mouthfeel. Full-bodied and exceptionally chewy with a velvety, luscious texture. Carbonation is low to moderate, enhancing the creamy mouthfeel. Noticeable but smooth alcohol warmth provides a comforting sensation without any sharp or solventy edges.
