Rocket Ship is a vibrant Double IPA that launches with an intense, multi-layered hop profile. Built upon a clean, crisp foundation of Golden Promise, Pilsner, and Cara malts, it provides a smooth canvas for a classic West Coast delivery. High-impact additions of Mosaic and Amarillo bring forth zesty notes of orange and lemon, while Chinook and Cascade contribute a robust layer of grapefruit and resinous pine. The experience is defined by its bright citrus intensity and a deep, forest-like woodiness that transitions into a firm, lingering bitterness. This is a sophisticated, post-modern take on the style that balances high-gravity strength with remarkable drinkability.
Appearance. Deep gold to light amber (8-10 SRM) with excellent clarity. Pours with a moderate-sized, persistent, off-white head that leaves significant lacing on the glass.
Aroma. Intense hop aroma featuring a complex blend of citrus zest, grapefruit, and pungent resinous pine. Secondary notes of tropical fruit and mixed berries are present. The malt provides a low, clean, grainy-sweet background, while the fermentation profile remains neutral with a very light, clean alcohol note.
Taste. Strong, complex hop flavors of orange peel, lemon, and grapefruit pith dominate the palate, followed by a heavy resinous and spicy pine character. The bitterness is high but well-integrated, leading to a dry, crisp finish. Low supportive malt flavors of light bread and grain persist underneath the hop layers.
