Schwarze Rose

Hold Your Horses is a bold American Stout that masterfully balances aggressive roasted malts with a decadent, velvety coconut character. The sensory experience begins with an intense bouquet of dark chocolate and espresso-like roast, layered over sweet, creamy toasted coconut. Despite its smooth, decadent texture, the beer maintains its stylistic integrity with a firm bitterness and underlying resinous hop notes that slice through the richness. The palate is treated to a harmonious interplay of charred grain and tropical sweetness, resulting in a complex, medium-full-bodied ride that finishes with a lingering, roasted warmth and a touch of coconut oiliness.

Appearance. Jet black and opaque (SRM 40+). Topped with a dense, persistent, dark tan head that leaves thick lacing on the glass.

Aroma. High intensity. Dominant aromas of dark chocolate and roasted coffee beans are complemented by a prominent, sweet toasted coconut presence. Subtle resinous hop notes and faint dark fruit esters provide complexity, while a clean fermentation profile keeps the roast character sharp and defined.

Taste. Rich initial impression of bittersweet chocolate and heavily toasted bread. The coconut flavor emerges mid-palate, adding a creamy sweetness that balances the moderate-to-high bitterness. Low citrusy and resinous hop flavors emerge toward the finish. It concludes with a balanced-sweet character, where lingering roasted grain and coconut oils persist without becoming cloying.

Mouthfeel. Medium-full body with a notably velvety and creamy texture. Carbonation is moderate. A light, smooth alcohol warmth is present at 6.6% ABV, providing a substantial feel without becoming hot or harsh.
