Schoppe Bräu Brut x Ale presents a sophisticated, bone-dry profile that marries the elegance of a sparkling wine with the character of a Belgian Golden Strong Ale. The use of champagne yeast drives a highly attenuated, effervescent body, while dry-hopping with Hallertauer Blanc provides distinctive aromas of white grape, elderflower, and lemongrass. Beneath the sparkling carbonation, a lean malt base offers subtle grainy sweetness that quickly yields to a peppery, spicy yeast character. It finishes remarkably crisp and clean, embodying the Brut moniker with a refreshing, vinous sophistication that bridges the gap between a classic ale and fine sparkling wine.
Appearance. Pale straw to light gold (3–4 SRM). Brilliant clarity with vigorous, fine-beaded effervescence. Forms a massive, rocky, snow-white head with excellent retention and delicate Belgian lacing.
Aroma. Moderate to high intensity. Pronounced fruity esters of pear and white grape from the Hallertauer Blanc hops and champagne yeast. Low grainy-sweet malt. Subtle spicy and peppery phenols mingle with herbal and floral hop notes. Clean fermentation profile with a hint of vinous character.
Taste. Initial impression is exceptionally dry and crisp. Soft malt flavors are quickly overtaken by vibrant notes of gooseberry and white wine. Moderate bitterness is amplified by the high attenuation. Yeast-driven peppery phenols and pome fruit esters persist into a long, bone-dry finish with a clean, mineral-like aftertaste.
Mouthfeel. Light body, feeling leaner than the ABV suggests due to high attenuation. Very high carbonation creates a sharp, effervescent, and prickly sensation. Minimal alcohol warmth; very smooth and refreshing with no astringency.
