Schneeeule Walter is an elegant expression of the traditional Berliner Weisse style, uniquely defined by the addition of Waldmeister. This effervescent ale leads with a sophisticated aromatic profile where sharp lactic acidity harmonizes with the sweet, herbal perfume of woodruff, evoking notes of freshly mown hay and vanilla. On the palate, a bracing citrusy tartness is balanced by soft, doughy wheat malt. The woodruff provides a botanical depth that lingers into a bone-dry finish. Effervescent and exceptionally crisp, it captures a historical profile with a bright, floral complexity and a refreshing, snapping acidity.
Appearance.Very pale straw color with a light, natural haze. It features a large, dense white head with poor retention, characterized by high effervescence and vigorous rising bubbles.
Aroma.High intensity lactic sourness is dominant, complemented by the distinct sweet-herbal aroma of woodruff (Waldmeister). Notes of sourdough bread, tart lemon, and green apple are present, alongside subtle floral and peach esters from traditional wild yeast fermentation. No hop aroma is perceptible.
Taste. The initial impression is one of clean, sharp lactic sourness. A light, bready, and grainy wheat malt flavor provides a delicate backbone. The woodruff contributes a unique herbal flavor reminiscent of vanilla and hay. Hop bitterness is undetectable; the balance is firmly driven by acidity. The finish is very dry and clean with a lingering tartness.
Mouthfeel.Light-bodied but not thin, with a very high, prickly carbonation level. There is no perceived alcohol warmth. The mouthfeel is defined by a crisp, refreshing acidity and a clean snap.
