This innovative Berliner Weisse variant presents a captivating fusion of traditional sourness and vibrant spice. Fermented with live yeast and lactic acid bacteria, it marries a clean, sharp lactic acidity with the distinct, tropical perfume of Habaneros. Zesty additions of orange, lemon, and pomegranate peels provide a bright citrus and tart red fruit complexity that beautifully lifts the nose. On the palate, the characteristic sourdough bread malt base is enlivened by a unique, ginger-like throat warmth from the Habaneros, offering a refreshing yet deceptively warming cold-tea sensation that lingers delightfully into a bone-dry finish.
Appearance. Very pale straw (approximately 2-3 SRM). Pours with a large, dense, white head that exhibits poor retention, typical of the style. Highly effervescent with a constant stream of bubbles, showing a slight haze from the live yeast and fruit peel additions.
Aroma. High intensity. Dominated by a sharply sour lactic character accompanied by the distinctive, tropical, and floral perfume of Habaneros. Bright citrus notes of orange peel and fresh lemon blend with a subtle, tart, red-fruit hint of pomegranate. Underneath, a low bread dough and sourdough-like wheat malt character is perceptible, with no hop aroma.
Taste. Initial impression is a clean, sharp lactic sourness that dominates the palate. A light, doughy, and grainy wheat malt flavor provides a brief supporting cushion. No hop flavor or bitterness is present. Instead, the balance is defined by acidity and spiced fruitiness, featuring prominent notes of zesty orange, lemon, and a touch of tart pomegranate. The distinctive flavor of Habaneros is highly apparent, bringing a fruity pepper taste and a slow-building, ginger-like throat heat. Finishes extremely dry and clean, with a lingering lactic tartness and a pleasant chili glow.
Mouthfeel. Light body, yet retains a crisp presence without being watery. Very high carbonation creates a highly effervescent, prickly sensation on the tongue. Features a biting, crisp acidity and a unique, warming physical sensation from the Habaneros that mimics alcohol warmth, though no true alcohol burn or astringency is present.
