Schneeeule Flora (2022) - Lindenblüte is an ethereal and bone-dry Brett Beer that showcases the delicate intersection of wild fermentation and botanical infusion. The 2022 vintage displays a matured sensory profile where the initial perfume of Lindenblüte (linden blossoms), elderflower, and robinia blossoms has evolved into a complex, honeyed floral bouquet. Brettanomyces contribution provides a counterpoint of soft leather and dried hay, lifting the elegant floral notes without overshadowing them. At a sessionable strength, it remains remarkably crisp and effervescent, delivering a sophisticated, dry finish that emphasizes the botanical complexity and the brewery’s mastery of wild yeast character.
Appearance. Pours a pale straw to light gold (SRM 2–3) with a noticeable haze. It is topped by a frothy, bright white head with moderate retention and delicate lacing that clings to the glass.
Aroma. High intensity floral aromatics dominate, featuring elderflower, honeyed linden, and sweet robinia blossoms. This is underpinned by a moderate Brett character of earthy funk, damp hay, and a hint of stone fruit. Very low grainy wheat malt is present in the background.
Taste. The initial impression is one of intense dryness and floral elegance. Flavors of dried flowers and apricot esters from the Brett fermentation lead into a lean, crisp mid-palate. Hop bitterness is very low, allowing the botanical tannins and yeast-driven earthy notes to provide structure. The finish is exceptionally clean and bone-dry, with lingering notes of wildflower honey and soft funk.
Mouthfeel. Light-bodied and highly attenuated, offering a nimble and refreshing weight. High carbonation creates a prickly, champagne-like effervescence. There is no alcohol warmth and zero astringency, resulting in a smooth yet lively texture.
