This matured Berliner Weisse pours a delicate, hazy straw-yellow with a lively, fleeting white head. The aroma is highly complex, marrying a clean, sharp lactic acidity with the nuanced development of a year-long bottle fermentation. Expect gentle drafts of wildflower honey, dried hay, and tart green apple driven by Schneeeule’s signature wild yeast. On the palate, a crisp, sour lemon punch is balanced by a subtle, raw wheat and Pilsner malt doughiness. It finishes intensely dry, refreshing, and effervescent, showcasing a beautifully matured, rustic character that defines the classic, historic style.

Appearance. Pale straw-yellow (2-3 SRM) with a slight, yeast-induced haze. Pours with a large, billowy white head that dissipates rapidly, supported by highly effervescent, rising carbonation.

Aroma. Moderately high, sharply sour aroma dominated by clean lactic acidity, lemon zest, and tart green apple. Bottle aging imparts complex, rustic undertones of dry wildflower, musty hay, and a hint of cider. Hop aroma is completely absent, while a faint, raw sourdough bread dough malt character lingers in the background.

Taste. A clean, dominant lactic sourness immediately commands the palate, accompanied by bright flavors of lemon pulp and peach. Supported by a light but noticeable grainy, doughy wheat and crackery malt flavor. Hop bitterness and flavor are completely absent, with acidity providing the structural balance. Finishes remarkably dry, clean, and refreshing, with lingering tartness and a touch of rustic wildflower honey complexity.

Mouthfeel. Light-bodied but never watery. Highly carbonated and effervescent with a spritzy, tongue-tingling sharpness. Crisp, refreshing acidity is highly mouthwatering, with no astringency and absolutely no alcohol warmth.
