Schneeeule August is a remarkable, chestnut-brown interpretation of a historic sour bock. It masterfully bridges the gap between deep, rustic maltiness and vibrant wild acidity. Aromas of tart red apples, dark cherries, and earthy funk mingle with rich, toasted Munich malt notes. On the palate, a clean, lactic sourness cuts through a robust caramel and bready malt backbone, leading to a surprisingly firm, rustic bitterness that references the industrial heritage of its namesake. This medium-bodied wild beer finishes off-dry and complex, offering a beautifully balanced, warming harmony of malt depth and sharp acidity.
Appearance. Kastanie-brown (chestnut brown, approximately 18–22 SRM) with a slight haze and ruby highlights. It is topped by a dense, off-white to light tan head that shows moderate retention before fading to a persistent collar.
Aroma. High intensity. A dominant, sharp lactic acidity and wild, rustic funk (earthy, leather, tart apple) are layered over a rich, toasted malt base showing notes of dark bread crust, light caramel, and dried dark fruits. No hop aroma is present.
Taste. An immediate impression of clean, lactic sourness is quickly balanced by deep, bready, and caramelized Munich malt flavors. Hints of tart cherry and plum emerge alongside a distinctive wild fermentation character. Unlike typical straight sours, a firm, rustic bitterness is present, balancing the malt sweetness and leading to a dry, complex finish with a lingering tangy aftertaste.
Mouthfeel. Medium body with a smooth, slightly creamy texture. Carbonation is moderate to high, providing an effervescent lift that tempers the acidity. A gentle, warming alcohol presence is noticeable but well-integrated, without any harsh astringency.
