Se elabora una vez al año (6 de Diciembre) y fermentada por primera vez, pasa por una lenta segunda fermentación en tanque a baja temperatura (Lagering) que dura un año. De vez en cuando pasan la cerveza de un tanque a otro para reavivar la segunda fermentación.
Después de embotellada, aún puede envejecer durante algunos años más en la botella.

La Samichlaus è una delle birre più pregiate e rare del mondo, si tratta di una birra doppio malto con gradazione saccarometrica elevatissima, prodotta dalla stessa azienda della Urbock 23° , solo nel periodo natalizio e in quantità ridotte.
Le sue caratteristiche richiedono lavorazioni particolari,per cui questa birra viene prodotta solo per gli intenditori o per chi vuole provare il piacere di bere un prodotto che si può definire tranquillamente ''estremo''.
Il colore si presenta diverso da ogni altra birra in commercio essendo di un rosso scuro che si avvicina incredibilmente al marrone. Il sapore è dolciastro e l'aroma di malto risalta insieme a un leggero retrogusto amarognolo... si beve nel baloon riempito a metà dalla birra e per il resto da una schiuma insolitamente compatta e persistente...E' perfetta con i prodotti affumicati e gli arrosti di selvaggina...
