Schilling Beer Co. Foy

Belgian IPA 6.5 º
Foy presents as a radiant, cloudy golden Belgian IPA, characterized by a sophisticated interplay between late-addition hops and a characterful house yeast. The aroma is dominated by vibrant notes of fresh citrus zest and dew-covered grass, interwoven with the signature spicy phenols of a prominent Belgian yeast strain. On the palate, a firm bitterness provides a robust foundation for flavors of lemon peel and herbal undertones. The fermentation profile adds complexity with hints of cracked peppercorn and clove, leading into a crisp, remarkably dry finish. This tribute to the Belgian village of Foy balances hop-forward intensity with elegant Old World fermentation character.
Appearance. Cloudy golden color (6 SRM). Features a large, creamy white head with excellent persistence and thick, decorative lacing. Clarity is hazy, as expected for the yeast-driven style.
Aroma. High intensity hop aroma featuring prominent notes of lemon zest, grapefruit, and fresh-cut grass. Moderate to high spicy phenols, specifically black pepper and clove, derived from the Belgian yeast strain. Low bready malt and very light fruity esters like pear are present in the background.
Taste. Initial impression is hop-forward and crisp. High hop flavors of citrus peel and resinous grass are supported by a medium-high bitterness. The malt flavor is low, providing a neutral, cracker-like base that allows the spicy yeast phenols to shine. Fermentation character is complex with a peppery bite. The finish is remarkably dry and clean, with a lingering herbal bitterness.
Mouthfeel. Medium-light body with high carbonation that provides a prickly, refreshing effervescence. A light alcohol warmth is noticeable but smooth. No astringency or harshness despite the high bitterness.
