Scatterlings Vooma presents a sophisticated sensory journey, blending 12- and 30-month oak-aged mixed culture Saisons. The foundation of Chevallier heritage malt, raw wheat, and rye malt provides a rustic, grainy depth, while the dry-hopping of Sovereign and Akoya hops introduces vibrant notes of lime zest and grapefruit. A complex fermentation profile reveals toffee apple and pear esters alongside a delicate, aged-hop funk. The experience begins with a bright acidity that transitions into a slow-building bitterness and a tannin-rich, creamy texture. This yellow-orange Saison balances its historical grain bill with an exuberant, modern freshness and a lingering, bone-dry finish.
Appearance. Yellow-orange in color (approximately 7–9 SRM). Features a persistent, dense ivory head with excellent lacing. The beer is hazy due to the mixed culture and unfiltered nature, showing high effervescence.
Aroma. High intensity; a layered bouquet of spicy rye and grainy, biscuit-like Chevallier malt. Fruity esters of pear and toffee apple are punctuated by lime and grapefruit notes from Akoya hops, alongside earthy, herbal Sovereign highlights and a moderate, funky wood-aged character.
Taste. A complex interplay of rustic grains and bright acidity. Initial tartness gives way to lime zest and grapefruit hop flavors. The malt presence is soft and grainy with a peppery rye snap. Fermentation provides pome fruit esters and a hint of funk. Bitterness is moderate and builds slowly to balance the acidity, finishing very dry with a lingering, clean tartness.
Mouthfeel. Medium body with a notable creaminess derived from raw wheat. High, effervescent carbonation. Distinct oak tannins provide a firm structure and a light, pleasant astringency. Alcohol warmth is very low and well-integrated.
