Scatterlings Thank You For the Day is a complex, barrel-aged Saison that artfully bridges farmhouse tradition with wild-ale character. Matured for thirteen months in oak, this blend delivers a sophisticated Lambic-like aromatic profile defined by funky, earthy undertones and rustic leather. The inclusion of Czech grown Saaz at the dry-hopping stage injects a vibrant herbal and spicy clarity that complements the grassy fermentation notes. On the palate, the beer moves through a grainy malt structure toward a firm, pronounced bitterness. A delicate touch of acidity brightens the finish, ensuring a crisp, bone-dry conclusion that remains exceptionally refreshing and multidimensional.

Appearance. Deep gold to light amber (SRM 6-8) with a slight hazy luminescence. Topped by a dense, rocky, ivory head with excellent retention and intricate Belgian lacing.

Aroma. High intensity featuring a blend of spicy black pepper, citrus esters, and prominent herbal Saaz hop notes. A significant funk presents as wet hay and earthy leather, layered over a soft, grainy malt backbone with subtle woody nuances from the extended oak aging.

Taste. An initial impression of crisp, grainy malt quickly yields to an assertive, herbal hop flavor from the Saaz dry-hopping. Medium-high bitterness is clean but firm, balanced by complex fermentation notes of dried grass and rustic funk. The finish is remarkably dry and effervescent, rounded out by a faint, bright acidity that lingers alongside a spicy hop aftertaste.

Mouthfeel. Light to medium-light body with very high carbonation, creating a prickly, effervescent mouthfeel. Low alcohol warmth is well-integrated. Highly attenuated and refreshing with no residual sweetness.

A blend of 2 barrels brewed in September 2022.

Pilsner malt from Crisp Maltings and raw Scottish wheat from Mungoswells formed the base layer.

Aged whole leaf Jester and Goldings were used in the boil and whirlpool for some bitterness, tannins and flavour.

The cooled wort was transferred to an open top fermenter and pitched with a mixed culture comprising of multiple Saison, wild saccharomyces & Brettanomyces strains as well as several lactic acid producing bacteria.

After 2 weeks in stainless steel, the beer was transferred to freshly steamed and Co2 purged barrels for the final secondary fermentation and ageing.

This beer was inspired by sharing Hansa Pilsner with my dad growing up. The base beer is very pilsner like with the yeast and bacteria transforming it into something special and completely different.

2 barrels with an average age of 13 months in oak were blended and dry hopped with Czech grown Saaz at 3g/l for 2 days at ambient temperature. The beer was then primed with cane sugar and a portion of freshly fermented saison and then bottled and kegged to go through a tertiary fermentation

Herbal, spicy Saaz mixed with Lambic like aroma leading into a funk forward grassy saison with a more pronounced bitterness and a touch of acidity rounding out the finish to make you excited about your next sip.
