This barrel-aged Saison offers a sophisticated sensory profile shaped by twelve months in oak. It presents an elegant fusion of traditional farmhouse yeast character and vinous complexity. The nose is greeted by a high intensity of fruity esters, reminiscent of citrus and pome fruit, intertwined with spicy black pepper. The extended wood aging imparts distinct white wine and champagne-like qualities, adding layers of dry grape skin and subtle oak tannins. On the palate, it remains exceptionally dry and highly attenuated, featuring a grainy malt backbone and a lively, effervescent finish that enhances its sophisticated, sparkling-wine-like elegance.

Appearance. Pale gold to deep amber with a slight haze. Topped by a dense, rocky, long-lasting ivory head that leaves persistent lacing. Effervescent with fine, rising bubbles.

Aroma. High intensity aromatic profile. Prominent fruity esters of pear and lemon zest blend with spicy, peppery yeast phenols. Subtle oak-derived vanilla and tannins provide a backdrop to distinct vinous notes of white wine and a crisp, champagne-like acidity.
