Santa Faz Santa Bárbara

Bock 6 º 20 IBU
Santa Bárbara presents a robust interpretation of a Dunkles Bock, bridging the gap between traditional Munich malt richness and deeper roasted characters. The sensory journey begins with an inviting display of coffee hues and chestnut glints, topped by a persistent dark beige foam. On the nose, intense roasted aromas harmonize with the bready foundation provided by Munich and Vienna malts. The palate experience is surprisingly fresh, delivering notes of toasted biscuit and pure chocolate. While the bitterness remains soft, a unique citric finish provides a crisp counterpoint to the underlying malty sweetness, ensuring a clean, complex, and surprisingly light finish.
Appearance. Coffee-colored (SRM 18–22) with warm chestnut glints and a slightly hazy appearance. Features a compact, persistent, dark beige head that leaves thick lacing on the glass after each sip.
Aroma. Moderate to high intensity. Dominated by rich, toasty Maillard products and bready malt character. Distinctive notes of roasted coffee and dark chocolate are present, alongside a clean lager fermentation profile with no significant hop aroma.
Taste. The initial impression is fresh and light, quickly transitioning into a complex profile of toasted biscuit and pure chocolate. A soft hop bitterness provides support without dominating the malt. While the grain bill provides an initial perception of sweetness, the finish is clean and dry with a subtle, unexpected citric note.
Mouthfeel. Medium to medium-full body with a smooth, creamy texture. Carbonation is moderate, contributing to a lively and fresh mouthfeel. At 6% ABV, there is a gentle, light alcohol warmth with no astringency.
