American IPA 6 º 28 IBU
San Xoan Medieval presents as a quintessential Hazy IPA, characterized by its vibrant 'hop juice' profile. The beer pours a glowing, opaque gold, crowned by a dense, meringue-like white head. A massive addition of hops drives an intense, persistent aroma of tropical stone fruits and bright citrus, supported by a neutral, bready malt base. The inclusion of oats provides a remarkably smooth, untuous mouthfeel that carries the fruit-forward flavors across the palate with minimal harshness. The bitterness remains restrained and soft, allowing the juicy hop character to lead into a refreshing, off-dry finish that honors its bold, historic inspiration with modern sensory depth.
Appearance. SRM 4–6. Hazy to opaque pale gold with a luminous sheen. Features a dense, rocky white head with high retention and thick lacing.
Aroma. High intensity hop aroma dominated by mango, pineapple, and ripe peach. Background notes of bready malt and clean, grainy scents from the oats. Fermentation is clean with supportive fruity esters and no alcohol heat.
Taste. High fruity hop flavor mirroring the tropical and citrus aroma. Low to moderate perceived bitterness that feels soft and masked by the grain bill. Malt provides a light bready backbone. Finishes clean and fruity with an off-dry, non-astringent aftertaste.
Mouthfeel. Medium-full body with a notable creaminess and smoothness attributed to the flaked oats. Moderate carbonation. Soft textures throughout with no hop burn or alcoholic warmth.
