L'aroma, oltre al cioccolato amaro e al caffé tipico delle stout, ha una nota liquorosa, vinosa, quasi di porto; in bocca si percepisce una corposità ruvida e densa, molto appetitosa, e un gusto deciso e persistente di malto torrefatto, più dolce che in una dry stout, ma ben equilibrato dall'amaro di luppolo e di legna bruciata.
Il finale è decisamente secco, e accompagnato da una sensazione vellutata e morbida, che sembra quasi concludere il sorso gradualmente, grazie anche alla persistenza del retrogusto. Potente ma elegante, intensa ma di facile bevibilità, la Oatmeal Stout ha il grosso pregio di mantenere le promesse; va gustata pian piano, da sola o in compagnia di un buon dolce al cucchiaio, che ne esalti il fine cioccolato e il caffé tostato.

Puede parecer extraño pero este estilo de cerveza fue muy útil durante un tiempo para aquellas madres que se encontraban en periodo de lactancia, ya que estas Oatmeal Stout les eran recomendadas por su alto aporte nutritivo debido al uso de la avena junto a otros cereales. Esto las hizo unas cervezas muy populares a finales del XIX, y aunque la última cerveza de este estilo fue elaborada antes de la II Guerra Mundial, Samuel Smith la recuperó del olvido en 1980 para volver a hacerlas populares.
La avena se había empleado en la elaboración de cerveza durante muchísimos años en zonas de Escocia y Yorkshire, auqnue en el s. XIX su empleo sufrió una gran caída en favor de la cebada y el trigo. Pero a principios del siglo XX resurgió su uso, pero en lugar de usar el cereal como harina se hizo malteándola o en copos. Samuel Smith es de las pocas cervecerías independientes que aún permanecen en pie en Inglaterra. Una de sus grandes señas de tradición y artesanía es que aún siguen empleando para la fermentación de sus cervezas los tanques abiertos de pizarra de Yorkshire, que se usaban antiguamente en la región de Tadcaster. Samuel Smith fue fundada en 1758 con el nombre de The Old Brewery y desde entonces no ha sufrido grandes cambios desde que pasara a manos de la familia Smith en 1847. La levadura empleada en la actualidad es la misma desde hace 5 generaciones, el lúpulo lo siguen añadiendo a mano y el agua la siguen extrayendo en baldes de cobre de un aljibe con 250 años de antiguedad. Por si todo esto fuera poco para conservar las buenas tradiciones, también mantienen la figura del maestro tonelero que fabrica los barriles donde se almacena la cerveza antes de su embotellado. Samuel Smith fue presentada por primera vez en el mercado estadounidense en 1978, y se convirtió rápidamente entodo un referente del movimiento emergente craft. Sus cervezas también están reconocidas como productos veganos y están registradas en The Vegan Society. Sin duda, estamos ante la cervecería más tradicional del Reino Unido y una de las que mayor prestigio ha alcanzado gracias a la calidad y autenticidad de sus cervezas. Vista: color marrón oscuro, semiopaca, con una buena espuma color crema, muy compacta. Olfato: aromas tostados de galleta, caramelo, bizcocho, acompañados por notas especiadas. Gusto: en boca siguen dominando las notas maltosas, caramelo, bizcocho, terminando en un amargor seco y profundo.
Sensación: cerveza de cuerpo moderao, textura sedosa, buena carbonatación e ideal para acompañar con una tabla de patés.
