This British Old Ale delivers a profound sensory experience, defined by its maturation with Oloroso Sherry wood and brandy. The profile is anchored by a luscious malt base, yielding intense aromas of caramel, molasses, and dark treacle. On the palate, complex layers of dried fruits like raisin and fig emerge, balanced by the vinous, nutty influence of the Sherry wood and a smooth, liqueur-like brandy warmth. Though potent, the beer remains exceptionally round and drinkable, offering a harmonious blend of sweet toffee and subtle oak tannins that linger long into a warming, sophisticated finish.
Appearance. Deep mahogany to dark reddish-brown (SRM 18–22). Generally clear, though its depth can make it appear nearly opaque. Moderate, cream-colored head with average to low retention.
Aroma. High intensity of malty-sweetness featuring caramel, molasses, and toffee. Strong vinous character from Oloroso wood alongside dried fruit esters like figs and raisins. Noticeable but well-integrated brandy warmth and nutty oxidation notes.
Taste. Initial impression is of luscious malt complexity with flavors of dark caramel, molasses, and toasted nuts. Moderate fruity esters suggest dark cherries and dried plums. The brandy maturation adds a liqueur-like depth and a touch of oak. Hop bitterness is moderate but serves only to balance the significant malt presence. Finish is long, warming, and somewhat sweet with a vinous aftertaste.
Mouthfeel. Medium-full to full, chewy body. Low to moderate carbonation. Significant alcohol warmth that is smooth and well-integrated. Light tannin from wood aging adds structural complexity without harsh astringency.
