Salvaje Aguilutxo
This vibrant Saison pays homage to the local character of Daimiel, blending traditional farmhouse rusticism with the elegant addition of thirty percent Chardonnay grape must. The result is a sparkling and sophisticated ale where the yeast-driven aromas of cracked black pepper and citrus meet the vinous qualities of white grapes and ripe pear. Expect a crisp, highly attenuated profile that balances grainy malt sweetness with a firm, continental hop bitterness. The Chardonnay lends a subtle pome fruit depth and a bone-dry, refreshing finish, making it a chispeante experience that remains remarkably approachable and savory despite its seven percent strength.
Appearance. Pale gold (6 SRM) with a dense, rocky white head that exhibits excellent retention and thick Belgian lacing. The appearance is slightly hazy, consistent with its unfiltered nature, and shows high effervescence.
Aroma. High aromatic intensity featuring a complex blend of fruity esters and spicy yeast phenols. Distinctive notes of white grape and pome fruit from the Chardonnay must complement citrus and cracked black pepper. Low, grainy malt presence is supported by moderate earthy and floral continental hop character.
Taste. Initial impression is bright and fruity, transitioning into a soft, grainy malt palate. Medium-high fruity esters of pear and citrus are balanced by a peppery phenolic spice. The Chardonnay addition provides a subtle vinous tartness and depth. Hop bitterness is moderate to firm, leading into a very dry, crisp finish with a lingering spicy and floral aftertaste.
Mouthfeel. Medium-light body with very high, prickly carbonation that creates a sparkling, effervescent mouthfeel. A light alcohol warmth is present but well-integrated, finishing clean without any astringency.

Ramón Sánchez- Camacho, conocido en Daimiel y más allá como “El Aguilutxo” es el fundador junto a su esposa “La María” del Bodegón de Daimiel. Su carisma y su encanto personal a quedado impreso en el restaurante donde siempre que vamos a llevar cervezas está dispuesto a contarnos mil y una anécdotas de sus años por altos hornos en Bilbao o enseñarnos los maravillosos calabacines de su huerto.En honor a esta irrepetible persona hemos hecho una de nuestras cervezas preferidas. Una cerveza estilo Saison a la que añadimos un 30% de mosto de uva de la variedad Chardonnay.El resultado es una cerveza amable, chispeante, sabrosa… que invita a sentarse con Ramón un ratito y saborear esas judías de La María que saben a Gloria.
