White Whale is a vibrant White IPA that bridges the gap between Belgian tradition and American hop innovation. A lean malt base allows the expressive profiles of Amarillo and Mosaic hops to take center stage, delivering a rush of juicy orange, tropical berries, and resinous pine. The character is deepened by a distinct Belgian yeast influence, contributing delicate threads of clove and cracked black pepper. This interplay of fruit and spice creates a bright, complex profile that remains refreshing and dangerously drinkable, finishing with a clean, hop-forward crispness that highlights its modern, bold construction.
Appearance. Pale gold with a characteristic haze from wheat and yeast. Topped by a thick, persistent white head with excellent lacing.
Aroma. High intensity hop profile featuring zesty orange, grapefruit, and tropical fruit from Mosaic and Amarillo hops. Complementary spicy phenols of clove and pepper from the Belgian yeast strain, with a light, grainy-sweet wheat malt background.
Taste. Initial burst of juicy citrus and pithy orange followed by a soft, wheaty malt backbone. Hop flavors of pine and berry meld with peppery yeast esters. Moderate bitterness provides balance without being harsh. The finish is dry and crisp with lingering citrus peel.
Mouthfeel. Medium-light body with a creamy yet refreshing texture. High carbonation enhances the bright, effervescent quality. Very low alcohol warmth.
