Dominion is a vibrant Fruit Beer that marries the tropical profile of a modern Pale Ale with the bright, acidic character of fresh pineapple juice. A clean malt backbone provides a canvas for an extravagant quintet of hops to deliver layers of mango and citrus, while the pineapple lends a distinctive, zingy sweetness. The result is a balanced, sessionable collaboration between Salopian and Castle Rock that showcases a seamless integration of natural fruit and modern hopping, finishing crisp and incredibly refreshing with a lingering tropical essence that avoids any artificial or syrupy weight.
Appearance. Medium gold (4–6 SRM) with a slight, natural haze from the pineapple addition. Topped by a dense, white, frothy head with good retention and light lacing.
Aroma. High aromatic intensity featuring fresh, succulent pineapple and a complex tropical hop profile of mango, passion fruit, and grapefruit. A clean, crackery malt base supports the fruit without competition; fermentation is clean with no significant yeast-derived esters.
Taste. The initial impression is a burst of tangy pineapple and citrusy hops. A clean, bready malt flavor provides structure against a moderate hop bitterness. The fruit character is authentic and well-integrated, leading to a dry, zingy, and refreshing finish with a lingering tropical aftertaste and no cloying sweetness.
Mouthfeel. Medium-light body with moderate to high carbonation that enhances the zingy character. Smooth and crisp on the palate with no astringency or noticeable alcohol warmth.
