Patience is a masterwork of time, emerging after 37 months of maturation. This Imperial Stout showcases a luxurious depth born from a dual-barrel odyssey, utilizing both ex-bourbon and ex-rum barrels to forge its identity. The extended aging has polished the roasted grains into smooth notes of bittersweet chocolate and espresso, while the spirits contribute layers of spiced vanilla, dark molasses, and toasted oak. Expect a sophisticated interplay of dark fruit esters like figs and raisins, finishing with a velvety warmth. It is a harmonious, exceptionally refined sipper that rewards the slow pace of its creation.

Appearance. Jet black and opaque (40+ SRM). Pours with a dense, deep tan head that shows moderate retention. High viscosity is evident by the thick legs that cling to the glass after swirling.

Aroma. High intensity and deeply complex. Dominant notes of dark chocolate and espresso are layered with rich ex-bourbon vanilla and coconut. The ex-rum barrels add a spicy, molasses-like sweetness. Pronounced esters of dried plums, figs, and raisins are present, with well-integrated, smooth alcohol.

Taste. Intense initial impression of bittersweet chocolate and heavily toasted malt. The mid-palate introduces complex spirit character, including charred oak, caramel, and spiced rum. Bitterness is moderate-high but balanced by a significant residual sweetness. The finish is long and lingering, featuring notes of dark fruit and roasted grain.

Mouthfeel. Full and very viscous with a chewy, luscious texture. Carbonation is low, enhancing the creamy mouthfeel. A significant, smooth alcohol warmth is present but never harsh or solventy.

Not all of our beers are easily born, and this one certainly took its time. The foundation of this beer is a blend of two distinct batches of imperial stout, both initially aged in ex-bourbon barrels for an extended period. Early on, both batches drifted slightly off track—not entirely lost, but in need of more time and care. We set them aside, allowing their character to evolve. To further develop one of the batches, we transferred it into ex-rum barrels for a secondary round of oak barrel aging. The result of our patience is a complex and exceptionally smooth imperial stout, refined over 37 months of careful aging. Best enjoyed at a serving temperature of 12-14°C.

Ze hebben ze apart gezet, zodat hun karakter zich kon ontwikkelen. Om een van de batches verder te ontwikkelen, hebben ze hem overgebracht naar ex-rumvaten voor een tweede ronde rijping op eikenhouten vaten. Het resultaat van het geduld is een complexe en uitzonderlijk zachte imperial stout, verfijnd gedurende 37 maanden van zorgvuldige rijping.
