This vibrant Double IPA showcases a saturated hop profile driven by the expressive combination of Galaxy, Mosaic Cryo, and Simcoe. On the nose, it offers an intense wave of passion fruit and citrus, anchored by resinous pine and ripe tropical berries. The palate follows with a luscious, juicy texture where the punchy fruit flavors are supported by a soft, bready malt backbone and a smooth, integrated bitterness. Despite its strength, the finish remains clean and remarkably drinkable, highlighting the modern, hop-forward character typical of Salikatt. It is a bold, fruity expression of contemporary brewing that emphasizes aromatic depth over harshness.

Appearance. Pale gold to light orange (6-8 SRM). Large, creamy, persistent off-white head with dense lacing. Opaque to heavily hazy, characteristic of its juicy New England-style presentation.

Aroma. High intensity hop aroma dominated by passion fruit, pineapple, and citrus from Galaxy, layered with ripe berries and tropical notes from Mosaic Cryo. Simcoe adds a supporting earthy, resinous pine character. Low, neutral grainy malt sweetness sits in the background, complemented by a light, clean fruity ester profile. Alcohol is present but smooth and non-solventy.

Taste. Initial impression is an explosion of tropical fruit and citrus. Intense flavors of mango, passion fruit, and peach from Galaxy and Mosaic Cryo are balanced by Simcoe’s citrus and pine notes. Bitterness is firm but smooth, avoiding any astringency. Malt provides a soft, clean, bready support without caramel or heaviness. The finish is medium-dry with a long, fruit-forward hop presence and clean alcohol warmth.

Mouthfeel. Medium-full body with a remarkably smooth, soft, and creamy texture. Carbonation is moderate, enhancing the juicy feel. A light, pleasant alcohol warmth is present but well-integrated, with no harsh hop-derived astringency.
