Cloud 9 Limited is a monumental Imperial Stout, defined by an extraordinary 40-month maturation in select bourbon barrels. This extended aging creates a profoundly complex sensory experience, where heavy chocolate notes merge with the structured influence of the wood. The bourbon barrels impart unmistakable hints of toasted coconut and rich vanilla, which swirl around a core of concentrated dark fruit. These plum and raisin characteristics are heightened by a slow oxidation process, resulting in a vinous, port-like depth. Robust and intensely full-bodied, it offers a harmonious interplay between roasted malt bitterness and the luxurious, lingering sweetness of the barrel.

Appearance. Jet black and completely opaque. Pours with a thick, deep tan head that shows moderate retention. Significant viscosity is apparent, with clear legs forming on the glass due to the high alcohol and residual sugars.

Aroma. Intense and layered aroma featuring heavy bittersweet chocolate and roasted coffee. The bourbon barrel influence is prominent, contributing sweet vanilla, coconut, and a touch of oaky spice. Deep esters of dried figs and raisins are present, complemented by a subtle, vinous oxidation and noticeable but smooth alcohol.

Taste. Initial impression is rich and decadent, dominated by dark chocolate and toasted malt. The mid-palate reveals complex barrel-derived flavors of vanilla and coconut, paired with a concentrated dark fruit character of prunes and black currants. Bitterness is firm but well-integrated, balancing the malt sweetness. The finish is long and warming with a lingering cocoa and bourbon-soaked wood aftertaste.

Mouthfeel. Very full-bodied and chewy with a velvety, luscious texture. Carbonation is low, enhancing the beer's silkiness. A significant, smooth alcohol warmth is present, reflecting its high gravity without being sharp or solventy.
