Cloud 9 is an intensely decadent Imperial Stout that has undergone an extensive eighteen-month maturation in selected bourbon barrels. The result is a masterclass in layered complexity, where the base beer's dark roasted character is transformed by the infusion of toasted coconut, cacao nibs, and rich vanilla. It pours with a heavy, oil-like viscosity, offering a sensory profile dominated by bittersweet chocolate and creamy tropical notes that harmonize with the spirituous, oaky depth of the barrel aging. Despite its formidable strength, the components meld into a seamless, velvety experience, balancing intense malt sweetness with a smooth, lingering warmth.

Appearance. Jet black and opaque (40+ SRM). Pours with a thick, deep tan head that shows moderate retention. High viscosity is evident through heavy legs and oily lacing on the glass.

Aroma. High intensity with a rich blend of bittersweet chocolate, toasted coconut, and sweet vanilla. Prominent bourbon-soaked oak provides a spirituous warmth, complemented by underlying notes of espresso, black licorice, and dark dried fruits like figs and raisins.

Taste. Initial impression is exceptionally rich and sweet, featuring dominant flavors of dark chocolate cacao nibs and creamy vanilla. The mid-palate introduces charred oak and caramel from the bourbon barrels. Bitterness is moderate to firm but balanced by the massive malt backbone. The finish is long and warming, with lingering notes of coconut and roasted grain.

Mouthfeel. Extremely full-bodied and chewy with a luscious, velvety texture. Carbonation is low to moderate. A smooth, noticeable alcohol warmth is present but well-integrated, avoiding any harshness or solvent qualities.
