This Wild Specialty Beer is a vibrant, dessert-inspired ale that captures the essence of a summer pavlova. Bright raspberry and succulent peach notes dominate the sensory profile, softened by a luxurious layer of aromatic vanilla and the smooth, creamy sweetness of lactose. The base provides a clean, lactic tang that cuts through the lush fruit, while the billowy texture mimics a soft meringue. It balances tart fruit acidity with a silky, rounded finish, making for an expressive yet refreshing holiday beer. The interplay of stone fruit and berries creates a multi-layered experience that remains light and approachable despite its complex ingredient list.

Appearance. Pours a soft, hazy coral to rose-gold hue (SRM 6–9) with a fluffy, pale-pink head that shows moderate retention. Slight haze is present from the fruit additions and lactose.

Aroma. High intensity of fresh raspberries and ripe peaches. Prominent sweet notes of vanilla bean and a milky creaminess from lactose are evident. A clean, lactic sourness provides a bright backdrop, with no hop aroma and minimal pale malt presence.

Taste. Initial burst of tart raspberry and sweet peach juice. The middle palate is softened by vanilla and a residual sweetness from lactose, reminiscent of whipped cream. Hop bitterness is virtually absent, allowing the lactic acidity to provide the primary balance. The finish is clean and slightly tart, lingering with fruit esters and a hint of marshmallow-like sweetness.
