This Wild Specialty Beer offers a vibrant sensory translation of its namesake dessert, led by the sharp, zesty brightness of local lemons which provide a clean lactic acidity. This tartness is immediately softened by a luxurious veil of vanilla and the unfermented sweetness of lactose, creating a lemon curd sensation on the palate. While the base is light and refreshing at a sessionable strength, the addition of these specialty ingredients ensures a dessert-like complexity. Expect a harmonious balance between citrus zing and a smooth, creamy finish that mimics the airy sweetness of toasted meringue over a delicate bready malt foundation.

Appearance. Pale straw to bright lemon-yellow (SRM 2-3). The beer displays a distinct haze with a frothy white head that shows moderate retention and light lacing, bolstered by the presence of lactose.

Aroma. High intensity aromatics of fresh lemon zest and citrus curd dominate. A clear, sweet-floral vanilla note provides a pastry-like character, supported by a subtle bready malt backbone and a clean, sharp lactic sourness. No hop aroma or funk is present.
