Down She Gose is a refreshing, heirloom-style wheat ale that balances subtle lactic tartness with a distinct marine minerality. Brewed with a base of Pilsner and wheat malts, this Gose pours a pale straw gold and offers a sensory profile defined by a delicate salty tang. The use of salt harvested from the ocean and locally sourced seaweed (Ulva Compressa) lends a unique minerally touch and an evocative ocean tang. High carbonation and a crisp, dry finish emphasize its thirst-quenching nature. Expect bright citrus notes and a light bready character from the acidulated malt, creating a balanced and highly sessionable experience.

Appearance. Pale straw gold (3 SRM) with a fluffy, white head showing moderate retention. Displays a slight to moderate haze consistent with an unfiltered wheat-based ale.

Aroma. Moderate intensity with a clean, sharp lactic sourness and a lemony edge. The malt character is bready and doughy, while the addition of seaweed and ocean salt provides a distinctive mineral and marine-like freshness. Very low pome fruit esters are present; no hop aroma is perceived.

Taste. Initial impression is crisp and tart. A medium-low bready malt sweetness is quickly balanced by a restrained salty tang and a mineral marine character. Bitterness is very low (within the 5-12 IBU range), with the acidity providing the primary balance. The finish is very dry and clean with a lingering, mouthwatering saltiness.

Mouthfeel. Medium-light body with high, effervescent carbonation. The salt content provides a slightly tingly, mouthwatering quality and a rounded mouthfeel that prevents the beer from feeling thin. No alcohol warmth or astringency.
